Chocolate Overload


It was my mams birthday on the 6th of November so I decided to make her a birthday cake =)
We both love chocolate and coffee and I had come across a 'Mocha cake' recipe on-line so I decided to give it a go but slightly modify it to suit my mam =)

Here's the recipe if you fancy giving it a go...

Cake: 
175g Butter
175g Sugar
150g Flour
25g Cocoa powder
1 Tbsp Boiling water & 1 Tsp Coffee mixed
3 Eggs

My oven is quite hot so I backed at 180 degrees for 20 mins

Icing:
1 Tbsp cocoa powder
1 Tbsp Boiling water & 1 Tsp coffee mixed
Icing sugar
Butter
Tiny bit of milk

I didn't really have a set amount of ingredients for my icing sugar i just plodded on and added ingredients till i got the texture i wanted. (Add more milk if too stiff a mixture and add more icing sugar if its too wet)

Method: 

  • Cream together the butter & sugar 
  • Add the eggs and coffee
  • Sieve in the flour and the cocoa powder
  • Fill cake tin (i used a tin with a pop out bottom)
  • Bake! 20mins at 180 degrees
  • Once the cake has cooled pop it out the tin
  • Slice the cake in half so you have 2 circles

  • Fill with half the icing
  • Place the cut of slice back on and spread the top with icing
  • I then added circles of malteasers

  • Then I added crushed up flakes (both mams favs)

I was really chuffed with how yummy it looked and even more pleased when I tasted it! Definitely a repeat bake!
