Cute cupcakes

Last week we had a charity 'Fun day' at work and all the money raised went to our local charity Forget me not children's hospice. So I decided bake, I'm not a baking goddess like some at work but I like to give it a go and since moving I've really missed a bit of baking now and again.

I didn't have much time as last week turned out to be a busy week which was quite unusual. The cakes were for wednesday so I baked them on monday night and decorated tuesday night before my anniversary night out. To speed up the process even more I used this super cute gadget my auntie once got me as a little pressi. Its like a waffle or sani press but for cupcakes...

So I used a basic recipe;
100g Gluten free self raising flour
100g Marg
100g Caster sugar
2 x Eggs

Then for one batch I added yellow food colouring & lemon juice and the other purple colouring with almond essence. (Purple & Yellow are the charities colours)

Then to decorate I used white piping icing for the yellow cakes with little colourful butterflies and the purple had melted marshmallow tops dipped in sprinkles =)
Here's how the little cuties turned out...
